This is dried meat or also known as beef jerky and it's very popular in the Northern part of Nigeria. In fact, they own it!! They make it from cow meat and it's usually spicy. I know not everyone is a fan. In fact there are articles dedicated to telling us why we should not eat Kilishi and Suya 🙄, gosh they spread like wildfire on those secret parents WhatsApp groups that I'm sure all our parents belong to.
Anyway, street food obviously may not be healthiest thing out there, definitely something kids sneak out to buy (I know I did 😊) and well nowadays people make them in the comfort of their home especially if you're concerned about the cleanliness or to those outside the country.
If you live in Abuja I'm sure you know by now that Area 1 is the Kilishi hub! I was there last weekend and they were kind enough to answer my questions and also allow me take a few pictures. I met Mallam Sani who has been making Kilishi for 8 years! 8 years pipo!!! It's actually a very lucrative business for him.
It takes him about 3 days to get the Kilishi ready. First he slices the meat thinly with a very sharp knife. Wo, that knife is not a joke oh! Those guys are very skilled in using the knife. After slicing the meat, he puts some spices on it and dries the meat. Every Kilishi mallam has their own way they combine spices. Some have special mixes but i know there is ginger, kuli kuli, pepper of course and a few others.
I know some of us love to drink garri alongside kilishi while some love to pair it with a cold drink!. My preference? Actually nothing.. whenever I eat something spicy, i don't take water because i love the pepper lingering in my tongue...for a while sha... I feel like water would be cheating 😜

My love for street food is beyond what work can describe. It lead me to Kilishi and I must say I love it. You neee to see me cleaning my nose after I just finished eating it😤. I drink water sha oh, I can't kill myself.
