Spicy, juicy, flavorful..... These are just a few synonyms to describe these meatballs. I have made meatballs before but i keep changing and tweaking the way I cook till I feel like I've nailed it and believe me when I say I have in fact nailed this one! 🔨🔨
This was our lunch a few days after Christmas, after all the many, maaany rice dishes! 🤦🏽♀️
Rice is a staple dish for almost any and every celebration in Nigeria. Jollof rice, fried rice, coconut rice, palm oil rice, banga rice, rice and stew are all family favorites especially during the festive season. We wanted something different after 2 days straight of rice eating, hence this fiery meatballs and spaghetti dish was born! 😍

Ingredients
300g minced beef
A sprig of fresh rosemary
1 tablespoon coarse black pepper
1 tablespoon of dried thyme
Salt and seasonings to taste
2 tablespoons of soy sauce
1 egg
3 tablespoons of breadcrumbs
Finely diced onions and pepper (atarodo a.k.a harbanero)
1 medium onion
2 cooking spoons of vegetable oil
*Special pepper blend*
Half cup of blended tomatoes
1 cup of coconut milk
Parmesan cheese
Directions
1. Mix in the first 8 ingredients with the ground beef and let sit for minimum of 30 minutes in the refrigerator.
2. Roll into small or medium sized balls.
3. Heat oil in pot or pan. I used a non stick pot. Next add in the meatballs and cook for 3 minutes on a medium heat. Turn to the other side and cook for another 3 minutes.
4. Add in the *special pepper blend* (this is just blended tatashe, atarodo, onions, garlic and ginger). I'll share this recipe soon! Next add the tomato blend and cook for 5 minutes.
5. The coconut milk goes in next, followed with seasoning and salt to taste. I like to add a tablespoon of dried thyme and curry.
6. Cover the pot and on a medium or even low heat, cook for 15 minutes or until its thick and a little oil floats on top. Just like how you know stew is ready! 🤪
The meatball sauce is ready! Enjoy with spaghetti and sprinkle some grated parmesan cheese on the hot bowl of meatballs. We had both rice and spaghetti cause both mums in the house don't eat pasta...👵🏾..

Hey Jennifer 🙋🏽♀️, yes you can but you'll need a meat grinder to grind it. They have them on Jumia. A blender won't work cause you will need to add water and I've not tried a food processor yet! But minced beef can be found in almost all supermarkets that have a meat section. Thank you 😍
